As the weather starts cooling down its the perfect dinner.&lt;br /&gt;&lt;br /&gt;1 lb Hamburger Meat&lt;br /&gt;1 can whole kernel corn&lt;br /&gt;1 can kidney beans&lt;br /&gt;1 can tomato soup&lt;br /&gt;4 oz cheese&lt;br /&gt;1/2 cup milk&lt;br /&gt;1 tsp minced onion&lt;br /&gt;1/2 tsp chili powder&lt;br /&gt;1 can of biscuits (I make my own)&lt;br /&gt;&lt;br /&gt;Brown meat and drain.  Mix rest of ingredients together (except biscuits) and put in a casserole dish.  Put biscuits on top and bake 350 degrees for 15-20 minutes.  (My recipe calls to dip the biscuits in butter but you can definitely omit that for health reasons)&lt;br /&gt;&lt;br /&gt;Instead I make my own drop biscuits, here's a recipe i really like&lt;br /&gt;&lt;br /&gt;2 cups all purpose flour&lt;br /&gt;1 TBSP sugar&lt;br /&gt;3tsps baking powder&lt;br /&gt;1 tsp salt&lt;br /&gt;1/2 cup shortening&lt;br /&gt;1 cup milk (can do part sour cream rest milk)&lt;br /&gt;Mix flour, sugar, baking powder and salt in medium bowl. Sugar&lt;br /&gt;1 C. oil&lt;br /&gt;1 qt Buttermilk&lt;br /&gt;4 Eggs (beaten)&lt;br /&gt;2C. Boiling water&lt;br /&gt;&lt;br /&gt;2C. Nabisco 100%bran or bran buds&lt;br /&gt;5tsp. Soda&lt;br /&gt;1 tsp Salt&lt;br /&gt;5 C. flour&lt;br /&gt;4 C. kellogs all bran&lt;br /&gt;&lt;br /&gt;Pour boiling water over 100%bran. In a separate bowl, beat oil and sugar. Add Buttermilk,eggs. and hot bran. Add flour, soda, and salt. Add all bran mix well. We make them all the time! They are baked instead of fried but I promise they are still SO yummy!&lt;br /&gt;&lt;br /&gt;16 mozzarella sticks (a.k.a. string cheese)&lt;br /&gt;1/8 cup flour&lt;br /&gt;1 cup Italian seasoned bread crumbs&lt;br /&gt;1 TBS oregano&lt;br /&gt;2 eggs&lt;br /&gt;1 TBS water&lt;br /&gt;Marinara sauce for dipping&lt;br /&gt;&lt;br /&gt;1. Mix eggs and water together&lt;br /&gt;2. Mix dry ingredients together&lt;br /&gt;3. Foil line a baking sheet&lt;br /&gt;4. Coat cheese stick with egg&lt;br /&gt;5. Coat with crumb mixture (make sure to get the ends and everything)&lt;br /&gt;6. Place on cookie sheet&lt;br /&gt;7. Place in freezer and let set for a bit (at least 30 minutes but you could do hours too)&lt;br /&gt;8. Do a second coating of the egg and then crumbs&lt;br /&gt;9. I made them a couple days ago and they are so yummy! They taste like a dessert and I love that they use oatmeal, wheat germ and whole wheat flour.&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;2 cups rolled oats&lt;br /&gt;1/2cup packed brown sugar&lt;br /&gt;1/2 cup wheat germ&lt;br /&gt;1 teaspoon ground cinnamon&lt;br /&gt;1 cup whole wheat flour&lt;br /&gt;1 cup raisins (I did 1/2 cup raisins 1/2 cup chocolate chips)&lt;br /&gt;3/4 teaspoon salt&lt;br /&gt;1/2 cup honey&lt;br /&gt;1 egg, beaten&lt;br /&gt;1/2 cup canola oil&lt;br /&gt;2 teaspoons vanilla extract&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;Preheat the oven to 350 degrees Generously grease a 9x13 inch baking pan.&lt;br /&gt;In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.&lt;br /&gt;Bake for 18-20 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Add Olive Oil, and Honey to the bowl and mix well.  Chop the Green Onion and add it as well, mixing the entire mixture well.  Season Chicken Breasts with Salt and Pepper and put Marinade over them in either a Ziploc or a glass dish.  Marinade in the fridge for 2-4 hours, taking Chicken out 20 min prior to grilling.  Grill the Chicken and Serve! I added Sauted Shrimp also for a little protein, grilled Chicken would be great too!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;1½ c ditalini pasta (I used Wheat Penne because that is what I had in the pantry, any would do)&lt;br /&gt;¼ c good extra-virgin olive oil &lt;br /&gt;2 t minced garlic (use fresh in a garlic press) &lt;br /&gt;Plum tomatoes, chopped (I used a generous handful because I like tomatoes, use however many you like)&lt;br /&gt;6 oz shredded (not grated) parmesaen cheese (I used a mix of Romano, Parmesean, and Mozzerella)&lt;br /&gt;8 large fresh basil leaves, coarsely chopped &lt;br /&gt;1 can of whole black olives &lt;br /&gt;salt to taste&lt;br /&gt;&lt;br /&gt;Preparation: &lt;br /&gt;&lt;br /&gt;Bring a large saucepan of salted water to a boil. Add the pasta and cook abut 8 minutes, al dente. Drain. Meanwhile, in a large skillet, heat the oil over medium heat. Add the garlic and saute until fragrant, about 1 minute. I got this recipe from my mom &amp;amp; every time I make it some one always asks for the recipe. Try it, you will LOVE it!&lt;br /&gt;&lt;br /&gt;2 apples peeled, chopped (gala, granny smith, &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;braeburn&lt;/span&gt;-you want the crispy ones)&lt;br /&gt;2 kiwis peeled, chopped&lt;br /&gt;1 cup strawberries, chopped&lt;br /&gt;1 orange (you only use the juice from the orange &amp;amp; grade 1 tsp of the rind)&lt;br /&gt;Combine all the above ingredients in a bowl.&lt;br /&gt;&lt;br /&gt;*When you chop all the fruit, do not use a blender or food processor. I use a fruit/veggie chopper.&lt;br /&gt;&lt;br /&gt;When all mixed together in your bowl add:&lt;br /&gt;1 T. apple jelly&lt;br /&gt;2 T. brown sugar&lt;br /&gt;&lt;br /&gt;Serve with cinnamon chips. Katie posted this on her blog a long time ago and I just love this recipe. This is the ONLY chocolate frosting recipe I use now. Thanks Katie you seem to always know great recipes.&lt;br /&gt;&lt;br /&gt;Sprinkles chocolate frosting:&lt;br /&gt;6 oz. butter&lt;br /&gt;pinch of salt&lt;br /&gt;2 1/2 c. confectioner's sugar, sifted&lt;br /&gt;1/4 tea. vanilla extract&lt;br /&gt;3 oz. bittersweet chocolate, melted and cooled&lt;br /&gt;Beat butter and salt in stand mixer until light and fluffy, about 2 minutes. Reduce speed, gradually add the sugar, until incorporated, stopping the mixer to occasionally scrape the sides of the bowl. Add the vanilla and chocolate, mix until combined, careful not to over mix and incorporate too much air.&lt;br /&gt;&lt;br /&gt;I have never made this one I am a total chocolate fan but I can only assume it is every bit as good as the chocolate. If it sat in the fridge all day then I cook it longer then 20 minutes.&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees&lt;br /&gt;6oz Spaghetti                                                   1/2 lb Ground Beef&lt;br /&gt;2 Beaten Eggs                                                  1/2 onion diced&lt;br /&gt;2 TB Butter                                                       1 Jar Spaghetti Sauce&lt;br /&gt;1/3 Cup Parmesan Cheese&lt;br /&gt;1 cup Shredded Cheese                                   &lt;br /&gt;1 cup Cottage Cheese or Ricotta Cheese&lt;br /&gt;&lt;br /&gt;Cook Spaghetti and drain. Stir in Butter, beaten eggs and Parmesan cheese. Form mixture into a 10 inch pie plate pushing noodles around the pie plate form(crust like). Spread cottage cheese or ricotta cheese on noodles. Cook onions and ground beef, add to spaghetti sauce. Spoon over cottage cheese or ricotta cheese and noodle. Bake uncovered for 20 minutes. I Hope you enjoy!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Fresh Salsa&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;2-3 jalapeno chile peppers (depending on how spicy you like it)&lt;br /&gt;2 cloves garlic, finely chopped&lt;br /&gt;1 onion, finely chopped&lt;br /&gt;1 tablespoon white sugar&lt;br /&gt;1 teaspoon salt&lt;br /&gt;1/4 teaspoon ground cumin&lt;br /&gt;1 (10 ounce) can diced tomatoes with green chile peppers&lt;br /&gt;2 (28 ounce) can whole peeled tomatoes&lt;br /&gt;1 lime Squeezed&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;Preheat oven to 400 degrees F (200 degrees C).&lt;br /&gt;Place jalapeno chile peppers on a medium baking sheet. Bake in the preheated oven 15 minutes, or until roasted. Remove from heat and chop off stems.&lt;br /&gt;Place jalapeno chile peppers, garlic, onion, white sugar, salt, ground cumin and diced tomatoes with green chile peppers in a blender or food processor. Every year I like to make some &amp;amp; give them out to our family. My favorite sugar cookies are thick, soft ones. Here is my best sugar cookie &amp;amp; frosting recipe.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Soft Sugar Cookies&lt;/strong&gt;&lt;br /&gt;Sift together:&lt;br /&gt;6 1/2 cups flour&lt;br /&gt;2 tsp baking soda&lt;br /&gt;2 tsp salt&lt;br /&gt;&lt;br /&gt;Put in beater bowl &amp;amp; blend:&lt;br /&gt;1 c shortening&lt;br /&gt;2 c sugar&lt;br /&gt;2 eggs&lt;br /&gt;2 tsp vanilla&lt;br /&gt;Then add: 2 c sour cream (1 16 oz tub)&lt;br /&gt;&lt;br /&gt;Add sifted flour to above mixture &amp;amp; mix until well blended. Roll out on a slightly floured surface to 1/4 in thickness. I have been making it for a few years now and it never fails to be one of my favorites!!!&lt;br /&gt;&lt;br /&gt;1 1/4 C flour&lt;br /&gt;1/2 C softened margarine/butter&lt;br /&gt;1 tsp baking powder&lt;br /&gt;1 egg&lt;br /&gt;1 tsp baking soda&lt;br /&gt;1/2 tsp vanilla&lt;br /&gt;1/2 tsp salt&lt;br /&gt;1 C oats&lt;br /&gt;1/2 C sugar&lt;br /&gt;1 C coconut&lt;br /&gt;1/2 C brown sugar&lt;br /&gt; Chocolate Chips (optional)&lt;br /&gt;&lt;br /&gt;Sift together flour, baking powder, baking soda, salt into a bowl. Add Raisins and other dried fruit and bake 5 minutes more. &lt;br /&gt;&lt;br /&gt;I always half the recipe because it makes a lot.  I have also make adjustments based on my preferences. It is meatless, so it is budget friendly and great when you are making dinner for many...&lt;br /&gt;&lt;ul&gt;&lt;li&gt;18 jumbo pasta shells (I use Barilla brand)&lt;/li&gt;&lt;li&gt;1 container (15 ounces) part skim Ricotta&lt;/li&gt;&lt;li&gt;1 package frozen spinach chopped, thawed, and drained and squeezed dry &lt;/li&gt;&lt;li&gt;2 cups shredded Italian cheese blend&lt;/li&gt;&lt;li&gt;3/4 cup half and half (divided)&lt;/li&gt;&lt;li&gt;1 garlic clove pressed &lt;/li&gt;&lt;li&gt;1/2 tsp. dried basil&lt;/li&gt;&lt;li&gt;1/4 cup Parmesan cheese&lt;/li&gt;&lt;li&gt;1/2 tsp. dried oregano&lt;/li&gt;&lt;li&gt;1/8 tsp. salt&lt;/li&gt;&lt;li&gt;28 oz. jar of spaghetti sauce&lt;/li&gt;&lt;/ul&gt;&lt;ol&gt;&lt;li&gt;Preheat oven to 350, cook pasta according to directions, drain, then drizzle with Olive oil so the shells don't stick&lt;/li&gt;&lt;li&gt;Mix ricotta, spinach, 1&amp;amp;1/2 cups of Italian cheese, 1/4 cup of Parmesan, and 1/4 cup of half and half.  Press in garlic and seasonings.  Mix well.&lt;/li&gt;&lt;li&gt;In another bowl whisk the rest of spaghetti sauce with remaining half and half.  Pour some of sauce mix on bottom of cooking pan.  Fill each shell with ricotta mixture (one scoop) I usually use my cookie dropper. Arrange filled shells in baking pan.  Top with remaining spaghetti sauce.  &lt;/li&gt;&lt;li&gt;Cover with foil, bake for 40 minutes. Remove foil, top dish with remaining 1/2 cup of Italian cheese. Bake uncovered an additional 5 min. Costco has the best ones!)&lt;br /&gt;Green Chilie Enchilada Sauce&lt;br /&gt;Whole Wheat Tortillas&lt;br /&gt;Beans (Your choice...Kindey, Pinto, Black, whatever your family likes)&lt;br /&gt;Salt &amp; Pepper &lt;br /&gt;Shredded Cheese&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;&lt;br /&gt;Shred the Chicken off the Rotisserie and warm in a skillet. Sprinkle a dash of salt and pepper for seasoning as well. Once the Chicken is warmed through, add the beans and the enchilada sauce and warm for another 5 min or so.  Once Chicken Mixture is done, fill in warmed tortillas and top with cheese.  Seriously, it is that simple and you are getting great protein and good carbs in this meal. Add the Shortening and mix till well incorporated.  Add the Sugar and then add the soda, salt, and flour while still beating.  Once all ingredients are together, mix until very well blended and pour into loaf pans.  Bake for 1 hour at 350 degrees. I found this one on the Oprah site that looked good and it was DELICIOUS. I made them tonight with homemade chicken noodle soup, they were so yummy. I could eat hundreds of these!!!&lt;/span&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;br /&gt;BAKED CAPRESE SALAD&lt;/strong&gt;&lt;br /&gt;1 baguette, sliced 1/2 inch thick, about 30 to 36 slices&lt;br /&gt;1/4 cup extra virgin olive oil&lt;br /&gt;Salt&lt;br /&gt;5 Roma tomatoes, sliced&lt;br /&gt;Freshly ground black pepper&lt;br /&gt;1 1/4 pounds fresh mozzarella cheese, sliced&lt;br /&gt;Leaves from 1 bunch of fresh basil&lt;br /&gt;&lt;br /&gt;Preheat the oven to 450°.&lt;br /&gt;&lt;br /&gt;Arrange the baguette slices on a baking sheet, brush with some of the olive oil and sprinkle with salt. Bake until the bread is pale golden and crisp, about 5 minutes. Top each slice of bread with a slice of tomato and sprinkle with salt and pepper. Top with a slice of mozzarella cheese and sprinkle with salt. Return the baking sheet to the oven until the cheese and tomato are just warm, about 5 minutes.&lt;br /&gt;&lt;br /&gt;Arrange the toasts on a serving platter. Top each toast with a basil leaf. Using the brush, drizzle the remaining olive oil over the basil. Sprinkle with salt and pepper, and serve. Makes 4 to 6 servings.&lt;br /&gt;&lt;br /&gt;(Be careful not to overheat the crostini. The cheese and tomatoes should be just warmed through and softened, but not melted or falling apart. I made it this week and we LOVED it. &lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Chicken Breasts (enough for your family)&lt;/li&gt;&lt;li&gt;2 cups of crumbled corn flakes&lt;/li&gt;&lt;li&gt;sour cream&lt;/li&gt;&lt;li&gt;Parmesan cheese&lt;/li&gt;&lt;li&gt;Italian seasoning&lt;/li&gt;&lt;li&gt;1 stick melted butter&lt;/li&gt;&lt;/ul&gt;&lt;ol&gt;&lt;li&gt;Put cornflakes in a zip lock bag and roll with rolling pin till crumbs (Let the kids do this, mine loved it)&lt;/li&gt;&lt;li&gt;Mix cornflakes with Parmesan cheese (about 1/2 cup), and mix in Italian seasoning (1 tsp)&lt;/li&gt;&lt;li&gt;Dip chicken in sour cream (coat it thick)&lt;/li&gt;&lt;li&gt;Then dip in cornflake mixture&lt;/li&gt;&lt;li&gt;Place in greased pan, and drizzle melted butter all over.  &lt;/li&gt;&lt;li&gt;Bake in 400F oven for about 30 minutes, or until golden, and done in the center&lt;/li&gt;&lt;/ol&gt;&lt;p&gt;I served mine with Veggies and cheese sauce, and bread sticks. Middle should look a little mushy.  DON'T overcook. :)  Enjoy!&lt;/p&gt;&lt;p&gt;* Sometimes I throw in one cup of quick oats. I even liked it better than Macaroni Grill's Marsala. Anyway, it is super easy and delicious...one of our new favorites. I paired it on top of whole wheat Linguine, but it would be really good with rosemary garlic roasted or mashed potatoes as well.&lt;br /&gt;&lt;br /&gt;4 Chicken Breast (I use the thinly sliced ones...they cook faster)&lt;br /&gt;2 Tbl Butter&lt;br /&gt;1 Pound Fresh Asparagus&lt;br /&gt;1/2 Pound Fresh Mushrooms &lt;br /&gt;1 Clove fresh minced Garlic&lt;br /&gt;1/4 Cup Marsala Wine&lt;br /&gt;1/4 Cup Water&lt;br /&gt;Salt and Pepper (however much you want to lightly season)&lt;br /&gt;Fresh Chopped Parsley (for garnish)&lt;br /&gt;Grated Parmesan Cheese&lt;br /&gt;&lt;br /&gt;In a Saute' Pan, place butter and heat to medium-high temperature. Add chicken and cook, turning until browned and thoroughly cooked. Remove Chicken and set aside.&lt;br /&gt;&lt;br /&gt;In same pan, add mushrooms and garlic an cook until mushrooms are heated and cooked through (about 6-8 minutes). Add Marsala Wine, water, and season with salt and pepper. Return Chicken to pan and arrange mushrooms on top of chicken.&lt;br /&gt;&lt;br /&gt;Arrange Asparagus over chicken and mushrooms. Heat to boiling and then reduce to medium and cover until asparagus is steamed through (about 8 minutes). &lt;br /&gt;&lt;br /&gt;Transfer chicken to a serving platter and spoon sauce and mushrooms on top. Serve asparagus along side the chicken. It has been raining here all day and the weather has been cooling off so it was the perfect night for soup!&lt;br /&gt;&lt;br /&gt;2 large potatoes&lt;br /&gt;2 TBSP finely minced celery&lt;br /&gt;1 TBSP finely minced onion&lt;br /&gt;2 cups chicken broth&lt;br /&gt;1 tsp salt&lt;br /&gt;2 tsp white vinegar&lt;br /&gt;2 TBSP flour&lt;br /&gt;1 1/2 cups milk&lt;br /&gt;1 cup plus 1 TBSP shredded cheddar cheese&lt;br /&gt;1 TBSP Monterey Jack Cheese (optional)&lt;br /&gt;2 slices of bacon cooked&lt;br /&gt;1 TBSP chopped green onion&lt;br /&gt;&lt;br /&gt;1. Peel potatoes and chop them into bite-size pieces- you should have about 4 cups. Make sure the celery and onion are minced into small pieces. The carrot should be grated small also, not shredded.&lt;br /&gt;2. Combine the vegetables with the chicken broth, salt and vinegar in a large saucepan over medium heat. Bring to a boil then turn down the heat, cover the pan, and simmer for 20 minutes. &lt;br /&gt;3. Whisk together the flour and milk in a medium cup or bowl. &lt;br /&gt;4. Remove the saucepan of vegetables from the heat and add the flour and milk mixture. Put the pan back on the heat and simmer, uncovered, for 5-8 minutes or until the soup has thickened.&lt;br /&gt;5. Add 1 cup cheddar cheese to the soup and simmer until melted. By this time the potatoes should be tender an falling apart. If not, continue to cook until the soup is as thick as you like it.&lt;br /&gt;6. To serve spoon the soup into bowls. Divide the remaining 1 TBSP of cheddar and the Monterey Jack and sprinkle on the soup. Crumble the bacon and sprinkle it evenly on top of the cheese. I put everything in the crockpot and once the chicken was cooked I shredded it. Just make sure that there is enough liquid in the crockpot so the meat doesn't dry out. We had it in tacos and I used corn tortillas.&lt;br /&gt;INGREDIENTS&lt;br /&gt;&lt;br /&gt;    * 1 1/2 pounds skinless, boneless chicken breast meat - cubed&lt;br /&gt;    * 1/8 cup red wine vinegar ( I used about 1 1/2TB)&lt;br /&gt;     * 1/2 lime, juiced ( I used a whole lime)&lt;br /&gt;    * 1 teaspoon white sugar&lt;br /&gt;    * 1/2 teaspoon salt&lt;br /&gt;    * 1/2 teaspoon ground black pepper&lt;br /&gt;    * 2 green onions, chopped&lt;br /&gt;    * 2 cloves garlic, minced&lt;br /&gt;    * 1 teaspoon dried oregeno (I used cilantro instead)&lt;br /&gt;    * 10 (6 inch) flour tortillas&lt;br /&gt;    * 1 tomato, diced&lt;br /&gt;    * 1/4 cup shredded lettuce&lt;br /&gt;    * 1/4 cup shredded Monterey Jack cheese&lt;br /&gt;    * 1/4 cup salsa&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;&lt;br /&gt;   1. Saute chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano. Simmer for an extra 10 minutes.&lt;br /&gt;   2. Heat an iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. It was so good and I liked it even more when she told me how easy it was! &lt;br /&gt;&lt;br /&gt;&lt;strong&gt;2-3 Chicken Breasts cubed&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1 can of Cream of Chicken Soup&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1 can water&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;8oz Block of low-fat Cream Cheese ( sometimes I use half)&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1 stick of butter (to save on fat I use 1/4 a stick and it's still good)&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;1 packet Italian Dressing&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Put in your &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;crock pot&lt;/span&gt; on high for 2 hours or on low for 4 hours&lt;br /&gt;&lt;br /&gt;Cook up a box of &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;Fettuccine&lt;/span&gt; noodles (I use wheat) and mix with the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;Alfredo&lt;/span&gt;! Katie Peterson Posted this recipe on her blog a few months ago. While I was grilling the chicken I put the veggies on foil on the grill that way they were cooked when I put them on the chicken. Thanks Katie for a great recipe.&lt;br /&gt;&lt;br /&gt;Monterey Chicken&lt;br /&gt;&lt;br /&gt;3 boneless chicken breasts, or 6 chicken tenders&lt;br /&gt;1 green pepper, chopped&lt;br /&gt;1/2 c mushrooms, chopped&lt;br /&gt;1 c shredded cheese&lt;br /&gt;&lt;br /&gt;Honey Mustard Sauce&lt;br /&gt;1/2 c mayo&lt;br /&gt;1 T honey&lt;br /&gt;1 T mustard&lt;br /&gt;&lt;br /&gt;Marinate chicken in 1/4 c soy sauce &amp;amp; 1 can of Sprite for a few hours to over night. Remove chicken and grill until juices run clear. Place a large piece of foil on grill, transfer chicken over to the foil &amp;amp; put them close together. Spread some sauce over each breast, cover with green pepper, mushrooms, and shredded cheese. Cook until cheese is melted. So when I am finished with the poll, I decide I should take it myself. I am now staring at the answers and wondering how am I going to choose. OK, lets start with process of elimination. I know I am not a huge pie fan, don't get me wrong, if there is a good pie you better believe I will dive in but it's not my favorite. So then I continue to look at the list, cookies, brownies, ice cream and cake. I can't eliminate one of them. I start thinking about chocolate chip cookies, Betty Crocker double chocolate brownies, cold stone ice cream, Claim Jumper chocolate cake. Elimination, I would take any and all in a heart beat. I then come up with the question, what couldn't I resist? Cookies, probably, brownies and ice cream, maybe. Chocolate cake, NEVER! After much inner debate I have realized chocolate cake must be my favorite. I'm not talking about a Walmart Birthday Cake, or a cake mix you make at home. I am talking about Claim Jumper Chocolate Cake or Grandma Moore's Chocolate Cake, the good, rich, and moist chocolate cake with Chocolate icing. Now I am dying for a good piece of Chocolate cake. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:georgia;"&gt;I hope the poll doesn't find you having the same inner conflicts as I did. Add onion and saute for 4 to 5 minutes. Add celery and carrots, saute for 1 to 2 minutes.&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span&gt; Add chicken broth, water and tomato sauce, bring to boil, stirring frequently. If desired add red wine at this point. Reduce heat to low and add kidney beans, green beans, spinach leaves, zucchini, oregano, basil, salt and pepper. Simmer for 30 to 40 minutes, the longer the better.&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span&gt; Fill a medium saucepan with water and bring to a boil. Add macaroni and cook until tender. Drain water and set aside.&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span&gt; Once pasta is cooked and soup is heated through place 2 tablespoons cooked pasta into individual serving bowls. Ladle soup on top of pasta and sprinkle Parmesan cheese on top. It is great with steamed Veggies and French or Garlic Bread.  Enjoy!&lt;/p&gt;&lt;p&gt;&lt;strong&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;:&lt;/strong&gt;&lt;br /&gt;Olive oil&lt;br /&gt;2 cups marinara sauce&lt;br /&gt;1/3 cup mascarpone cheese&lt;br /&gt;1/4 cup chopped fresh Italian parsley leaves&lt;br /&gt;2 teaspoons chopped fresh thyme leaves&lt;br /&gt;1 pound purchased cheese tortellini&lt;br /&gt;2 ounces thinly sliced smoked mozzarella&lt;br /&gt;1/4 cup freshly grated Parmesan&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Directions:&lt;/strong&gt;&lt;br /&gt;Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking dish.&lt;br /&gt;Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish. Top the mixture with the smoked mozzarella and Parmesan. A few modifications I make are I add a can of black beans to it for more fiber. I also add a onion to the ground beef when I am cooking it. Rinse with cold water and drain. Toss with Italian salad dressing and salad seasoning. Refrigerate until needed (may be done up to 1 day in advance).Gently toss pasta with tomatoes, broccoli, cheddar cheese, cucumber, mushrooms, olives, green bell pepper and onions until evenly coated. (The recipe called for a STICK! I did 2 Tbsp and it was fine, next time I will probably try just using Pam and no butter).&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;DRESSING&lt;/strong&gt;&lt;br /&gt;1/2 Cup Crisco Oil&lt;br /&gt;1/4 cup Red Wine Vinegar&lt;br /&gt;1/2 cup Sugar&lt;br /&gt;1 tsp dry mustard&lt;br /&gt;Mix dressing ingredients together and shake up well.&lt;br /&gt;&lt;br /&gt;Mix lettuce, onions and broccoli together (add as many onions and broccoli as you prefer). Then add some of the crunchy topping to the salad, once again add all by preference. You wont use all of the topping, I put the extras in a bag, it will last for a while. I am still on the same batch and I have eaten it every day for the past week! Then add the dressing and mix up (I put my salad in a Tupperware and shake it good to coat it). I only put on less than a TBSP of dressing for my plate of salad. You should have lots of dressing left over to store in your fridge. Some people like a lot of dressing but I like it just to barely coat my salad.&lt;br /&gt;I love this salad, it is so so yummy. Mike was teasing me tonight that I am going to turn green from eating it too much. Add water, tomato paste, wine and bouillon; cook, stirring occasionally, for 10 to 15 minutes or until flavors are blended.&lt;br /&gt;&lt;br /&gt;LAYER ingredients as follows in ungreased 13 x 9-inch baking dish: 1/2 pasta, 1/2 sauce and 1/2 cheese. Repeat layers; cover.&lt;br /&gt;&lt;br /&gt;BAKE for 20 to 25 minutes or until heated through and cheese is melted. Season with salt.&lt;br /&gt;&lt;br /&gt;FOR FREEZE AHEAD:&lt;br /&gt;PREPARE as above; do not bake. Cover; freeze for up to 2 months. Thaw overnight in refrigerator.&lt;br /&gt;&lt;br /&gt;PREHEAT oven to 350° F.&lt;br /&gt;&lt;br /&gt;BAKE for 45 to 55 minutes or until heated through and cheese is melted. Season with salt.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Suggestion:&lt;/strong&gt;&lt;br /&gt;Serve with Seasoned Steamed Broccoli and French Bread.
